With this pandemic going on there is a lot of people losing their mind others, not so much.
But for all of us, here are some baking recipes to try to make it easier to spend time inside and avoid losing our minds.
Triple berry pie
Ingredients
Homemade pie crust for a 9'' deep dish pan. This recipe makes 2 crusts: one for the bottom and one for the top.
7 cups fresh or frozen raspberries, blueberries and blackberries about 2 1/3 cups of each type of berry*
1 cup granulated sugar (plus a little extra to sprinkle on top of the pie)
1 Tablespoon lemon juice
4 Tablespoons cornstarch
2 Tablespoons butter
1 large egg white beaten with a fork
1. Cook berries.
Simmer berries, sugar and lemon juice in a large saucepan over medium heat until warm and juicy, about 5-10 minutes, gently stirring occasionally.
2. Thicken filling.
Spoon out about 1/2 cup of the juice from the pan into a bowl. Stir cornstarch into the juice until smooth. Bring pot of berries back to a simmer and slowly pour in the cornstarch. Gently stir mixture (being careful not to mash the berries), until thickened, about 2-5 minutes.
Remove from the heat ad stir in the butter. Let it cool for 15 min.
3. Add to pie shel.
Pour mixture into unbaked pie shell (in a 9 in deep dish pan). Add lattice top or a whole top with holes pricked on top for steam to escape. Pinch the edges of the top and bottom pie crusts together and crimp the edge, if you like.
4. Brush with egg wash.
Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with sugar and cinnamon.
5. Bake!
bake at 400º F for 40-45 minutes. Check it after about 25 minutes and place a piece of tinfoil over it if the top crust is getting too browned.
6. Enjoy.
Remove to a wire cooling rack and allow to cool for several hours.
Lemon bars
Ingredients
Shortbread Crust:
1/2 cup butter , at room temperature
1/4 cup powdered sugar
1 cup all-purpose flour
dash of salt
Lemon Filling:
Zest of one large lemon
1 cup granulated sugar
3 Tablespoons fresh lemon juice
3 Tablespoons all-purpose flour
1/2 teaspoon baking powder
2 large eggs
1. Make crust.
Mix butter and powdered sugar together until well combined.
add flour and salt and mix just until combined, press the dough evenly into the bottom of an 8 inch square baking dish. Bake the crust for 10 minutes in an oven preheated at 350ºF.
2. Make the filling.
Combine lemon zest and sugar in a bowl. Add lemon juice, flour, baking powder, and eggs and mix well until the sugar has dissolved.
3. Bake.
Pour the lemon filling into the baked crust and bake again for 20 more minutes or until the lemon filling is set. Remove the lemon bars from the oven and allow them to cool completely before dusting with powdered sugar and serving.
4. Enjoy in home near a fire!
Churros
Ingredients:
1 cup water
5 tablespoons butter
1 tablespoon sugar
¼ teaspoon salt
1 cup all purpose flour
2 eggs
1 teaspoon vanilla extract
4 cups oil for frying (corn, peanut, canola, light olive)
For coating, mix together in a shallow dish:
¼ cup sugar
½ teaspoon ground cinnamon
1. Make the dough.
In a pot, add water, butter, sugar and salt. Mix together until butter melts and water boils.
Turn off heat when water boils and add flour. Mix until you get a dough then place it on a mixing bowl and let cool for 5 minutes or so.
2. Add flavor.
In a small bowl, beat eggs with vanilla extract. Then add to mixing bowl with dough. Blend until thick and smooth.
3. Get you heat ready.
Heat your frying oil to 350º F. While heating, fill pastry bag with dough.
In a separate bowl, prepare coating by mixing sugar and cinnamon.
4. Make churros.
When oil is properly heated, push snippets of dough in the oil and fry them for 3-4 minutes.
Remove from oil and place on top of paper towels to drain oil. When the oil is drained, coat each churro with sugar and cinnamon.
5. Enjoy.
